Its not so much the hobby is dying, its just that shops are dying and everything is going on line.
I have a good model shop in my town https://dorkingmodels.co.uk/

but it only opens 3 days a week now as most sales are on line. Its sad to see these go as its nice to see the models built before you buy

These shops in the high street are at least 400 years old and the ceilings are about 6ft high which is a pain if you are 6ft 4" like me :)

It is sad to see the brick and mortar go but good thing these guys are changing their business model to meet demand.
 
We actually have a big decent shop that is active with other than plastic models here in Memphis. I have seen it move twice (to bigger quarters each time) since I started going there back in 2009.
Recently the former owner who tended to run it a little like a flea market, sold it to a new owner. It is now cleaner and much more organized than it used to be.
