This year is off to a great start. This is the cornbread that will be sacrificed for the dressing.

Cindy needed the giblets out of the turkey early to make the gravy so I figured to brim the turkey this year. I mixed up brown sugar based brim and have it soaking overnight. Will upload progress photos as them happen.

We're expecting only 20 this year. I'm getting my second cup of java in me and then it's balls to the wall getting things setup.

I usually have lots of protein but only three at the table this year so a small turkey. No spatchcock technique needed. Cornbread ready, four layer pumpkin cake almost done, side dishes like three color potato casserole, and special Peanut Butter Nog ready... Perhaps a photo before we ravage the bird.

SWMBO and I are traveling to Richmond, VA today to visit my son and his mob. We will be meeting with his In-Laws on Saturday and he and I will be going to Udvar-Hazy on Sunday. CinC House and I really like Richmond and all its history. A few years ago we took a Segway tour and had a blast!

We are the "Sweethearts with the Sweets" today at my BB Seester's house. 2 of Gramma Rhiner's peach cakes and Teresa's legendary Pineapple Upside-down cake stand at the ready.

Heap big snow bear down on humble Tee-pee. Ee-peesh-ni-yeh yell-O.
Time to fire-up the snowblower, put the Sta-bil in the tractor, run them both of them and swap places in the shed.
Well, since the tires were aired up, and the best way to mix up the fuel, is to run the tractor.......
Yeah, I mowed about 1/3 of our place this afternoon. Even though it was just 25 degrees F. It was kinda pleasant.

Soaked in a brim of brown sugar, apples, onion and some sea salt, not much. Wild heat fluctuations on the oil account for the extra crispy but man, it was the best turkey I ever did.

And this is the source of the heat fluctuations... long story but we did have two fire fighters on scene ready for action.
 
Many years ago a guy I worked with deep fried a turkey for the first time ...............
A frozen turkey , ............. any guesses how that turned out , ........ oh , btw , he did live ..............
 
My wife asked me to try my Turkey Breast recipe, using the cheesecloth technique, on the whole bird. It worked and the breast was fantastic but the rest, legs, wings, et cetera, were a touch bland. Lesson learned!

Don't make fun of the apron! My wife took the photo while the entrée was about to be carved.

My knees are blown out, back hurts and we got all this stuff to clean up now. Shop is a wreck because I store all the spare chairs and tables out there behind all the racks and stuff. AND we have another family gathering to go to today.
Our security cameras did catch the fire.
see if that works. The think lit up a minute after I walked away to get the turkey.
Everything you read about frying a turkey says don't leave it unattended. I've been frying turkeys for years and never had this happen, in my defense.
