Turkey for Thanksgiving, Ham for Christmas Eve and Chicken of the Sea for Christmas Day (y)

Boiled Shrimp, Breaded Shrimp, Crab and Hush Puppies. There's also Cherry lemon pie but that will have to wait till later if you know what I mean. (y)


ALL I have to do now is make through New Years Day :D at least i've got a week to recover. :eek:hyeah

James a Hush Puppy is sort of a cornbread ball, corn dodger, corn fritters. They are generally sweeter than cornbread and have onions chopped up.

Story is, back in the day when the kitchens were built separate from the "Big House" because the danger of fire, the servents would cook up the extra cornbread mix into balls and throw at the dogs who were following the food into the big house looking for anything that might fall. Another story is folks fishing would use them to keep the dogs from trying to take the catch as they landed fish.

Yet another story was during the Civil War, soldiers would use them to keep dogs quiet as they moved about so not to give notice to the enemy.

I like the first story better, I can see this line of cooks going into the big house and all the dogs following them and one of the kids throwing these things, "hush puppy, hush!".

Takes some talent to get the mix to roll off the spoon and make a pretty ball, I got a recipe if y'all want to try it. :good:

Still searching for "our" recipe.

My Mon has our old recipes but I can't get her attention long enough to scan it and email it to me.

This is as close as I've seen so far but we added chopped onion which made it sweet.

One thing they don't mention, we use to let the batter rise, sometimes overflowing the pans they were mixed in and then mix them again. Not sure what that did but it was an important step in the process. So mix the batter, if you have it right it should rise up like a cake then mix it around again then cook.

Use a tablespoon to roll the ball of batter, dip the spoon in HOT water, spoon up about a half a tablespoon and then hold it over the hot oil, it should slide right out, if you have enough oil, the hushpuppy should roll over on it's own when cooking.

Y'all come on down to south Louisiana and we'll get you fixed up with some real Cajun food. North Louisiana and New Orleans are different cuisines. I personally only eat homemade gumbo. We have a great group of gumbo cooks in my family and my wife's gumbo is awesome. She does chicken and sausage which gives it just the right flavor. And, she likes the chicken and I like the sausage.

Gumbo is a great meal for Christmas because it is usually cold and it is always better the second day. Unfortunately the temp was in the upper 70s yesterday.
